Dr. Jessie Hoffman is an Assistant Professor and the current Graduate Program Director in the Department of Human Nutrition at Winthrop University, where she has been a faculty member since 2020. She teaches at both the undergraduate and graduate levels and leads research focused on the intersection of nutrition, the gastrointestinal tract, and host health. A registered dietitian with a strong foundation in both basic and applied nutritional science, she holds a PhD in Nutritional Sciences from the University of Kentucky, where her research examined the impact of environmental pollutants and prebiotics on gut and metabolic health.
Dr. Hoffman’s academic work spans curriculum development, online and in-person instruction, and mentorship in research. Her recent scholarship includes studies on dietary fiber, gut microbiome composition, food timing, and the relationship between nutrition and stress. She has published in journals such as Environmental Pollution, The Journal of Nutrition Biochemistry, and Reproductive Toxicology, and is co-author of an open educational resource on drug-nutrient interactions. Her work has been featured in numerous invited lectures, podcasts, and professional conferences.
She is an active member of the Academy of Nutrition and Dietetics, the American Society for Nutrition, and serves on editorial and advisory boards related to nutrition science and education. In recognition of her contributions to research, teaching, and community outreach, she was named the 2023 Recognized Young Dietitian of the Year by the South Carolina Academy of Nutrition and Dietetics.
