Undergraduate Programs
The Department of Human Nutrition
offers three Bachelor of
Science degree options:
Each option requires
students to complete nutrition and related courses such as biology,
chemistry, psychology, economics, and mathematics. The Didactic
Program in Dietetics prepares students for accredited dietetic
internships and careers as registered dietitians. The Food
Systems Management option prepares graduates for entry level
management positions in the food service industry. The Nutrition Science option is a pre-professional program
to prepare students for graduate school and admission to medical, dental
and pharmacy schools.
Students completing degree requirements for the Food
Systems Management Option are eligible to apply for a minor
in business administration. The
minor in business administration consists of 18 hours of the
following: BADM 180, ACCT 280, two of the following: MGMT 321, MKTG
380, FINC 311; two of the following, one of which must be above 299:
ACCT 281, CSCI 207, ECON 215, ECON 216, HCMT 200, QMTH 205 or any
course above 299 in ACCT, BADM, ECON, ENTR, FINC, HCMT, MGMT, or
MKTG. Proficiency in computer applications equivalent to the
level required for the successful completion of CSCI 101 and three
from CSCI 101A, B, C or P.
A minor
in Health Care Management consists of 15 semester hours
as follows: BADM 180, HCMT 200, 300, 302 and 303. Students
completing the Food Systems Management Option could add the Health
Care Management Minor by successfully completing HCMT 302 and 303 in
addition to the FSM degree option required courses.

In addition to
completing the required program coursework, students must complete
General Education Program (GNED) coursework. These courses
are designed to provide students with a wide range of educational
experiences and exposure to various disciplines.
