Dr. Stallings, R.D., L.D. is a professor in the Department of Human Nutrition and serves currently as the senior associate dean for the College of Arts and Sciences and as acting chair of the Department of Human Nutrition. She is a registered dietitian and is licensed by the State of South Carolina. She teaches courses in food science, research methods, and nutrition assessment. Her research interests include nutrition and body composition, weight maintenance, nutrition assessment of various population groups, and bone density.
While serving as Acting Chair of the Department of Nutrition, Stallings has a secondary office location in 304 Dalton Hall.
