Professor Thomas has been working in the field of nutrition and dietetics for 30 years. In addition to positions in academia, Thomas has professional experience in a wide range of areas including dialysis centers, home health agencies, hospitals, long-term care facilities, nutrition education in the public schools, and in public health with chronic disease prevention and special needs children. As a full-time faculty member since 1994, Thomas teaches courses in human nutrition, food composition, and cultural perspectives in food and nutrition. Beyond the classroom, Thomas is actively involved as a mentor to her students; in 2004, she was awarded with an emerging Leaders Teaching Award by a campus student organization.
